E is not a fan of vegetables, and I just hate it because I so badly want her to eat balanced meals. I've been looking up toddler-friendly recipes (that are also somewhat soft since we still only have ONE tooth), and came across one for chickpea/veggie patties. These things are chock full of protein and veg with chickpeas, carrots, mushroom, spinach, and corn.
I made them last night after she went to bed, and I put one on her tray tonight for dinner. She LOVED it! Score one for mommy!
*revised 1/18/16: the love was short lived. Next day she wouldn't touch it. Waaahhhh! But I'm not giving up!!
